Orzo Salad

This recipe took 10 minutes to throw together, tastes delicious, and is very light and perfect for summer !



Ingredients


  • 1 bell pepper

  • 1 Cucumber

  • 1 cup Cherry tomatoes

  • 1/2 red onion

  • 5-6 Pepperoncini peppers

  • 3-4 cups romaine lettuce, chopped

  • 1/2 block feta cheese (~1/2 cup)

  • 10oz orzo pasta

  • Italian dressing of choice (I use an Italian dressing seasoning packet, mixed with 1/4 apple cider vinegar, 1/4 cup water, 1/2 cup olive oil)


Instructions


Prep orzo according to instructions and let cool in a strainer. Chop up all vegetables and cheese and add them to a large bowl (use a paper towel to remove any excess water from lettuce so the bottom of the salad does not become watery). Once cooled completely, mix up/separate orzo with a fork and add to your bowl with all the vegetables. Add 1/2 the container of dressing to the salad and serve!


If you're using this for meal prep, I keep the dressing separate then add 2T and some chicken to the bowl before eating it.
