Cooking for the Kuhlman's 2

It's officially fall so that means it's time for all things pumpkin! I'm not actually a huge pumpkin spice person (PSL's are a no from me), but there are definitely certain pumpkin things I really enjoy. This week for a snack I made some pumpkin muffins using Kodiak Cake mix. These are a staple in our house during the fall for a sweet treat.


Kodiak Pumpkin Muffins


Ingredients:

- 1.5 cups (133g) of Kodiak Cake Mix (I use the buttermilk one) *you can also use 1.5 cups of flour

- 1/4 cup melted butter

- 1/3 cup (70g) brown sugar

- 1/4 cup milk *you may not need as much milk if you use just flour

- 1.5 cups (1 can) canned pumpkin

- 1 tsp. baking soda

- 2 tsp. cinnamon

- 1 tsp. pumpkin pie spice

- 1/2 tsp. salt


Topping:

- 1/4 cup softened butter

- 1/4 cup (48g) brown sugar

- 1/2 cup (60g) flour

- 1 tsp. pumpkin pie spice


Instructions:


  1. Preheat the oven to 425*

  2. Mix together the dry ingredients then slowly add all the wet ingredients for the batter. Evenly divide batter into a muffin tin.

  3. Making the topping and evenly crumble over the batter in the tins. Gently press the crumbles into the top of each muffin.

  4. Bake at 425* for 5 minutes and then lower the oven temp to 350* (without opening the oven) and bake for another 12-15 minutes or until the center comes out clean.

Macros per muffin: 8f, 22c, 5p





For lunches this week I wanted to do something quick and easy since we both have busy work weeks after coming off of a week of vacation. I've been enjoying bagel sandwiches w/ turkey, avocado, and spicy mustard. The bagels are also homemade (rainy Sunday called for lots of baking!) using the recipe from https://feedingthefrasers.com/boiled-baked-everything-bagels/





Last but not least, I've been on a major salmon bowl kick the last few weeks. This week we smoked the salmon at 180* for about 2.5 hours with salt, pepper, and spicy mustard. Most of the time I will just buy the pre-marinated, wild caught salmon filets from Costco and bake them in the oven. I'll add the salmon on top of rice, add more spicy (or honey) mustard, and some type of vegetable. In this bowl I add cut up cucumbers and tzatziki sauce as well.
