If I'm being honest, the easiest version of this would be to buy the McCormick White Chicken Chili seasoning packet and follow the directions on the back. This version, however, is still super simple and tastes great!
Ingredients
2lbs chicken breast
One 4oz can diced green chili's
2 cups chicken broth (I like the brand kettle and fire)
1 can great white northern beans, drained
1 small onion, chopped
1 tablespoon minced garlic
1/2 teaspoons chili powder
1 teaspoon oregano
2 teaspoons cumin
1/2 teaspoon pepper
1 teaspoon salt
1/4 cup flour
Add chicken, beans, and onion to crockpot. Add in all spices (except flour) and top with the broth. Cook on low for 7-8 hours or high for 3-4 hours or until chicken pulls apart. Shred chicken and allow to sit in crockpot for another half hour.
Top with shredded cheese, cilantro, and sour cream (or plain Greek yogurt) as desired. I'll also serve it over rice for some extra carbs !
