It can be really hard to find a good granola that is not overloaded with sugar, preservatives, or extra ingredients. Turns out, making your own granola is fairly easy and I like it even more than store-bought!
Ingredients
2 cups rolled oats
2T flour
1/4 cup shredded coconut
1/4 cup peanuts
2 teaspoons cinnamon
1/4 teaspoon salt
1/3 cup honey
1/8 cup coconut oil
1/8 cup peanut butter
1 teaspoon vanilla
Instructions
Preheat oven to 300°. Melt together the coconut oil, peanut butter, and honey until smooth. Add in spices and vanilla. In a large bowl, mix together the oats and flour. Pour the oil mixture over the oats until evenly coated. Spread out oat mixture on a parchment paper lined baking sheet. Bake for 20 minutes then remove from oven and add shredded coconut and peanuts. Bake for another 15 minutes or until coconut begins to brown and oats get crunchy.
Cool completely before storing in an airtight container.
I like to add granola to yogurt and fruit or on top of oatmeal for extra crunch.
