I love making this for meal prep, brunch, etc. it's super easy, can be thrown together the night before, and reheats well. This is great by itself or can be used for less-mess breakfast sandwiches.
Ingredients
12-15 eggs
5 servings of Amylu breakfast sausages, chopped (roughly 15 of them)
3/4 cup milk (I use fairlife for a bit more protein)
1 bell pepper, chopped
Salt and pepper to taste
Crack all eggs into a bowl and add milk. Whisk until combined. Add in sausage, peppers, and salt/pepper.
Bake at 350° for 25-30 minutes or until center is set.
Makes 8-10 servings. 12f 2c 18p (if using 12 eggs and 8 servings)
