I received this recipe from a client and have again, tweaked slightly, to make it exactly how I like!
Ingredients
1 15oz. can of chickpeas, drained and rinsed
1 avocado
1 cup cherry tomatoes, halved
1/2 English cucumber, quartered
1 clove of garlic, chopped
1/2 red onion, chopped
1T olive oil
1/4 cup feta cheese
Juice from 1 lemon
Salt and pepper to taste
Mix all ingredients together into a large bowl. Chill until ready to serve. I think this recipe is best after sitting in the fridge for a few hours to let all the flavors come together.
I'll eat this as a side, salad topper, or add in some shredded chicken or shrimp for more protein.
