I love soups and stews in the winter, especially with how easy they are for meal prep!
Ingredients
2lbs beef stew meat
~ 4 cups diced potatoes
~ 1 cup chopped carrots
1 small onion, chopped
2.5 cups of beef broth (I use kettle and fire brand)
1T Worcestershire sauce
1T balsamic vinegar
1t dried thyme
1t garlic powder or 1 glove of garlic
1t salt
Pepper to taste
*1/4 cup flour
Combine all ingredients except the flour and add to slow-cooker for 5 hours on low. Remove 1 cup of broth of stew and mix with 1/4 cup of flour until a thick paste has formed and no flour clumps remain. Add in this mixture to the stew and stir to combine (this thickens the broth, if you want it more soup-like you can skip this step). Put the slow cooker on higher for another 1-2 hours to allow broth to thicken and meat becomes tender.
