I love using this to make potatoes a bit more exciting. It does not require a whole lot of prep and can be a great carb source to throw together quickly.
Ingredients
Sweet potatoes
Salt and pepper to taste
Olive oil
Peel sweet potatoes, stab them with a knife or fork several times, wrap in a damp paper towel and microwave for 3-4 minutes or until potatoes become slightly soft.
Cut the potatoes into slices (I like to keep them slightly thicker so they are more like steak fries). Brush them with olive oil and add any seasonings you may want (I've done sea salt and cinnamon before too and that is amazing).
Air fry (or convect bake) at 400° for 8-12 minutes or until the outsides start to crisp.
