Recipe: Slow Cooker Buffalo Chicken

Think Buffalo chicken dip, in meal prep form! This is super simple to throw together and is great in wraps, on salads, with crackers, or just by itself.


Ingredients


2lbs boneless skinless chicken breast

1 cup Buffalo sauce of choice (my favorite is pictured below)

1/2 - 1 cup plain Greek yogurt (I like to use full fat yogurt for this)

1/4 cup water

*1 ranch seasoning packet


Add chicken, water, and Buffalo sauce to your slow cooker (or instapot). you can also add in the ranch seasoning packet here as well if you like. I've made it both with it and without and both versions are good.* Cook on high for 3-4 hours or low for 7-8 hours or until chicken becomes tender and begins to pull apart.


Remove chicken from slow cooker (along with any of the leftover sauce in the bottom) and shred. Mix in yogurt. You can do 1/2 cup if you want the chicken to remain more spicy, the full cup it you want it more mild. Additionally, you could add extra Buffalo sauce here as well.
