Recipe: Quinoa Salad

Each day for the next 30 days I'll be posting a meal prep recipe. This will vary from dinners, breakfast items, crockpot recipes, etc. Hopefully these recipes will give you some ideas for your own food prep to kick off the new year.


First up, my new favorite carb option: quinoa salad.



Ingredients:


1.5 cups dried quinoa (you can do multicolored or plain)

1 cup of cherry tomatoes, halved

1 bell pepper of choice, chopped

1/2 cup feta cheese (or cheese of choice, I've used mozzarella pearls too)

2T olive oil

1/4 cup balsamic vinegar

Salt, pepper, and garlic to taste


Cook quinoa according to instructions (I prefer to use the instapot to make it softer. Do 1:1.25 quinoa to water and set on 'pressure cook' for 1 minute. Let sit for 5 minutes then release the pressure).


Once quinoa is done then add in olive oil, salt, pepper, and garlic. Let quinoa cool for 15 minutes. Add in chopped vegetables and cheese then stir in balsamic vinegar.


I will eat this warm or cold. Let me know if you try it !
